Recipe - Statesborough Meatloaf

1 One half tablespoon Vegetable oil
1 md Onion chopped
3 md Garlic cloves crushed
2 pound Lean ground beef
2 teaspoon Salt
1 teaspoon Black pepper
2 Eggs beaten
Three fourths cup V8 juice
One half cup Fresh parsley chopped
1 tablespoon Bottled Caribbeanstyle
Sauce such as Hellfire &
Damnation Hot Sauce
1 cup Fresh breadcrumbs
Preheat oven to 350~. Heat the oil in a skillet and saute onion until
translucent, about 5 mins. Add garlic and saute one minute. Transfer the
onion and garlic into a lg. mixing bowl and add the beef, salt, black
pepper, eggs, juice, parsley, and sauce. Mix well. Oil a 12"x8"x2" pan and
pour in mixture, molding it into a loaf. Sprinkle the top w/breadcrumbs and
bake for on hour.
