Recipe - Squash Gratin With White Cheddar Cheese

1 Mediumsized onion, cut or sliced up
2 pound Yellow squash, thinly cut or sliced up
1 teaspoon Salt
Freshly ground pepper
2 Eggs
2 tablespoon Sugar
One half cup Milk
One half pound White cheddar cheese, grated
(substitute yellow if need
be)
2 tablespoon Butter
In a saucepan cook the onions and squash in a small amount of boiling water
for 10 to 15 minutes, until tender. Drain well. Arrange in a 2quart baking
dish. Add the salt and pepper.
In a medium bowl combine the eggs, sugar, milk and cheese. Pour over the
square mixture and dot with the butter. Bake in a 350F oven for 45 minutes.
Cut into squares.
Serves 6 to 8
