Recipe - Squash Bars

4 Whole Eggs, Beaten
One half cup Shredded Cheddar Cheese
(More If You Like)
One half cup Onions, Chopped
2 tablespoon Parmesan Cheese
1 cup Bisquick® Baking Mix
2 tablespoon Parsley, Chopped, Dry
One half teaspoon Salt
One half teaspoon Oregano
One half teaspoon Garlic Powder
One half cup Oil
3 cup Squash, Finely Sliced
In a large bowl, beat the eggs. Add the remaining ingredients, except the
squash. Stir until well blended. Fold in the squash & mix well. Pour into a
well greased 9x13x2 baking pan and bake in a 350 degree oven for3540
minutes or until top is light brown. Let cool about 10 minutes and cut into
bars of desired size. These reheat well in the microwave.
NOTES : Good with either zuccini or yellow squash.
