Recipe - Sprouts-Stuffed Canapes

1 pack Canapes of desired shape
1 cup Bean sprouts
One half cup Finely chopped onion
One half cup Finely chopped tomato
One fourth cup Finely chopped coriander
One fourth cup Finely chopped boiled potato
One half Lemon
Salt to taste
Freshly ground cummin seed
powder
4 Green chillies finely
chopped; (4 to 5)
1 cup Fine bikaneri sev;
(optional)
One half cup Tamarind chutney
One half cup Green chutney
Oil to deep fry or oven to
bake
If using readymade canapes, they can be baked in a warm preheated oven
till lightbrown and crisp.
OR
Deep fry them till light brown. Drain on kitchen towel. Do all the canapes
and keep them aside.
Mix the onion, tomato, potatoes, half the coriander, lemon, salt and green
chilli together. Chill it for some time.
Before serving fill mixture in the canapes, put a dash of both chutneys on
top. Sprinkle a pinch of salt and cummin powder (jeera). Garnish with sev
and remaining coriander.
Serve right away.
