Recipe - Spoonbread (Cornmeal)

1 cup Cornmeal
1 teaspoon Salt
3 cup Water
1 cup Milk
2 Eggs
Bacon Fat or Butter
Boil water and slowly add cornmeal. Cook 5 minutes or until very thick.
Cool til "warm". Beat in eggs one at a time. Add salt and milk.
Preheat oven to 350 and preheat wrought iron skillet. Melt a couple of
tablespoons of bacon fat in pan, add cornmeal mixture and return
immediately to oven. Bake at 350 for 45 minutes or til knife comes out
clean.
