Recipe - Spinach-Arugula Pesto

2 tablespoon Chopped; peeled and toasted
hazelnuts
1 One half cup Packed spinach leaves
1 One half cup Packed arugula leaves
(or extra 1 One half cups
spinach)
3 tablespoon Freshlygrated Parmesan
cheese
One half cup Olive oil
Defatted chicken or
vegetable stock
Salt; to taste
Freshlyground black pepper;
to taste
In a food processor or blender, process all of the ingredients until
smooth. Add enough stock to desired consistency.
