Recipe - Spicy Tomato Sauce

4 lg Ripe tomatoes OR 6cups
chopped
2 lg Celery stalks; minced
1 lg Green bell pepper; minced
1 lg Onion; minced
One half cup Cider vinegar
2 tablespoon Sugar
2 teaspoon Mustard seed
1 teaspoon TABASCO pepper sauce
1 teaspoon Salt
In 4quart saucepan, bring all ingredients to a boil. Reduce heat to low;
cover and simmer 15 minutes.
Uncover saucepan and simmer 45 minutes longer, stirring occasionally until
mixture has thickened slightly. Spoon into clean jars. Cover and store in
refrigerator up to 1 week.
Makes 3 One half cups.
