Recipe - Spicy Sweet Chipotle Chili (No Beans)

1 Big steak; about a pound or
more
MARINADE: (FEW HOURS OR
OVERNIGHT)
One fourth cup Homebrew beer; dark and
heavy
One fourth cup Orange juice
1 tablespoon Sweet mirin; or vinegar and
some sugar
1 Clove (large) garlic; minced
1 sl (1inch) ginger; minced
1 Orange; finely grated peel
from
2 Red Habaneros; finely
chopped
2 Green onions; chopped
4 Chipotles; finely chopped
1 teaspoon Cumin
1 teaspoon Coriander
SAUCE, ETC
2 tablespoon Hot smoke finishing sauce;
or a good BBQ sauce
2 tablespoon Joes Smoke Sauce
1 One half tablespoon Pebre
1 lg Onion; chopped
1 md Carrot; chopped
1 Celery stalk; chopped

Here is a chili I made using some of the hot sauces from Jennifer's
Trainer's Hot Lick's (I've made just about every one). Turned out great
I've made it about 4 times now, once with chicken, which was just about as
good.
Marinade first, then add all remaining ingredients. Simmer uncovered until
all are cooked and the amount of liquid is just right. If it is too soupy,
mix 1 tsp of cornstarch with some sauce and add it to chili.
Serve with flour tortillas, fresh salsa, lettuce or alfalfa sprouts, your
favourite black beans, and lots of that home brew!
