Recipe - Spiced Potato And Spinach

3 tablespoon Sunflower oil
1 Onion; cut or sliced up
1 Clove garlic; crushed
2 Cm; (1) piece root
; ginger, finely
; chopped
2 teaspoon Cumin seeds
4 teaspoon Ground coriander
2 teaspoon Chilli powder
300 ml Vegetable stock; ( One half pint)
500 g Potatoes; peeled and cubed
; (1lb)
Salt and freshly ground
black pepper
1 500 g pack leaf spinach;
defrosted and
; roughly chopped
Heat the oil in a large saucepan. Add the onion, garlic, ginger and spices
and fry for 12 minutes.
Add the stock, potatoes and seasoning.
Cover and cook gently for about 40 minutes.
Add the spinach, stir well and simmer for another 510 minutes.
