Recipe - Southwestern Chicken Salad

1 pack Perdue Fit 'n Easy Chicken
Tenders
2 tablespoon Olive oil divided
Salt to taste
Pepper to taste
One half cup Fresh lime juice
1 small Red onion
One fourth cup Fresh cilantro
One half Jalapeno pepper seeded
2 cup Cantaloupe dried, ripe
1 lg Avocado peeled/seeded/dic
1 cup Apple peeled and minced
1 Head Romaine lettuce
Brush chicken with 1 tablespoon oil and sprinkle lightly with salt and
pepper. Grill or broil 68 inches from heat source for 23 minutes perside
until cooked through. Dice and reserve. In a food processor combine lime
juice, onion, cilantro, and jalapeno. Process until finely chopped.
Gradually add oil with machine running. Season to taste with salt and
pepper. In a salad bowl toss chicken, melon, avocado and jicama with
dressing. Serve on a bed of Romaine lettuce leaves.
