Recipe - Southwestern Chicken

One half cup Southwestern Seasoning
1 Egg white
4 Skinned chicken breast
halves, (6ounce)
Vegetable cooking spray
SOUTHWESTERN SEASONING
2/3 cup Yellow cornmeal
1/3 cup Italianseasoned breadcrumbs
One fourth cup Grated Parmesan cheese
4 teaspoon Chili powder
4 teaspoon Ground cumin
4 teaspoon Garlic powder
1 teaspoon Sugar
One half teaspoon Ground red pepper
Place One half cup Southwestern Seasoning in a large ziptop heavyduty plastic
bag.
Lightly beat egg white in a shallow dish; dip chicken into egg white,
turning to coat. Add chicken to bag; seal bag, and shake to coat. Place
chicken on a 15 x 10 x 1inch jellyroll pan coated with cooking spray.
Lightly coat chicken with cooking spray.
Bake at 400 degrees for 45 minutes or until done. Yield: 4 servings.
SOUTHWESTERN SEASONING: Combine all ingredients in large ziptop heavyduty
plastic bag; seal bag, and shake well. Store tightly sealed in
refrigerator, and shake well before each use. Yield: 1One half cups (serving
size: 2 tablespoons).

Carbohydrate; 69mg Cholesterol; 1765mg Sodium
Serving Ideas : Use as a coating mix for poultry, pork, or fish.
