Recipe - Southwest Tuna With Black Beans

1 tablespoon Vegetable oil
1 small Onion; chopped, (One fourth cup)
1 Anaheim chili; chopped, or
One fourth cup canned chopped
green chilies
1 Clove garlic; crushed
1 tablespoon Grated lime peel
3 tablespoon Lime juice
1 md Tomato; chopped, (Three fourths cup)
2 cn (15 to 16 ounces each) black
beans; rinsed and drained
2 cn (6 ounces each) white tuna
in water; rinsed and
drained
Heat oil in 10inch skillet over medium heat. Cook onion, chili and garlic
in oil about 2 minutes, stirring constantly, until onion is softened.Stir
in remaining ingredients. Cook about 5 minutes, stirring occasionally,
until hot.
