Recipe - Southern Little Cakes

One half cup Grated lemon peel
One half cup Peach jam
One half cup Orange marmalade
4 Egg whites
1/3 cup Sugar
2 tablespoon Sugar
One half teaspoon Salt
Mix lemon and Jam. Beat 3 egg whites, 1.3 cup sugar and salt until stiff.
Combine with lemon mixture. Drop from a spoon on clean white or brown paper
on a cookie sheet. (I use the baking paper from Pampered Chef, and no, I do
not work for them!!) Bake 10 minutes in a hot oven. Remove from oven and
cover with a meringue of 1 egg white, stiffly beaten with 2 tablespoon
sugar. Return and bake until light brown.
