Recipe - Southern Crab Royal

1 One half tablespoon Onion minced
1 ds Nutmeg
2 tablespoon Green pepper finely
Chopped
One fourth teaspoon Dry mustard
3 tablespoon Margarine
2 Egg yolks beaten
2 tablespoon Flour
1 pound Crabmeat
1 teaspoon Salt
8 Patty shells baked
2 cup Half & Half
Mushrooms & parsley/
Garnish
Saute onion and green pepper in margarine until tender. Add flour and salt
and cook 2 minutes. Gradually stir in Half & Half and stir until smooth.
Add nutmeg and mustard. Gradually add egg yolks, stirring constantly. Add
drained, flaked crabmeat. Cook 5 minutes. Serve in individual baked patty
shells and garnish with fresh mushrooms and parsley. From "The Southern
