Recipe - Slavic Potato Bread

Three fourths cup Ricotta or cottage cheese
2 teaspoon Active dry yeast
2 2/3 cup Bread flour
Three fourths teaspoon Grated nutmeg
Three fourths teaspoon Salt
One fourth teaspoon Cayenne
Three fourths cup Mashed potatoes
1 Whole egg
1 Egg yolk
1/3 cup Water
1. Drain the cheese in a sieve lined with cheesecloth or a sturdy paper
towel for 30 minutes. Discard the liquid.
2. Add all ingredients, including the drained cheese, in the order
suggested byyour bread machine manual and process on the bread cycle
according to the manufacturer's directions.
