Recipe - Skinny Spanish Rice

1 tablespoon Diet margarine
1 One half cup Onion chopped
1 cup Rice; converted white
Uncook
1 cup Green pepper chopped
1 cup Celery chopped
1 teaspoon Chili powder
8 ounce Can whole tomatoes
Undrain
1 teaspoon Salt
2 cup water
3 tablespoon Bacon bits
Melt the margarine in a heavy skillet. Saute the onion. Stir in the rice,
green pepper, celery, chili powder, canned tomatoes and salt. Add the
water; bring mixture to a boil. Reduce heat and simmer, covered, for about
20 minutes until the liquid is absorbed and the rice is cooked. Garnish
with the bacon bits to serve. Per Serving: Calories116.1
