Recipe - Skinned Taters

Ingredients:

2 lg Potatoes; baked
One half cup Plain yogurt
3 md Carrots; grated
1 pn Curry powder
2/3 cup Grated cheddar cheese

1. Preheat oven to 350 degrees F

2. Cut the potatoes in half and scoop out the pulp. Reserve it for another
meal. Cut each potato skin half into fingersize pieces. Place the potato
skins on a baking sheet and set aside.

3. In a mixing bowl, blend together the yogurt, carrots, and curry powder.
Spoon a small portion of this mixture onto each piece of potato skin.
Sprinkle some cheese over the pilling, place skins in the oven and bake
until the cheese has melted, 10 to 12 minutes. Let the skins cool slightly
before serving them to young children.

Per serving: 65 Calories; 2g Fat (26% calories from fat); 3g Protein; 10g
Carbohydrate; 6mg Cholesterol; 40mg Sodium Food Exchanges: 1/2
Starch/Bread; One half Vegetable; One half Fat
