Recipe - Skillet Sausage And Peppers

6 ounce Turkey sausages, italian
style
5 Garlic cloves; minced
1 Green pepper; cut or sliced up
1 Sweet pepper; cut or sliced up
One half md Onion; chopped
12 ounce Red potatoes; cut or sliced up 1/4"
thick
8 ounce Stewed tomatoes
Tabasco sauce
1 teaspoon Olive oil
In a large, nostick skillet, brown the sausages until they are firm enough
to slice. Remove the sausages and slice; set aside.
Add oil to the skillet and heat over a mediumhigh flame. Add garlic, and
fry about 1015 seconds. Add the vegetables and the partlycooked
sausage, and fry, stirrring, until the potato slices begin to brown.
Add the tomatoes and a few drops of tabasco. Cover the skillet and turn
the heat down to low. Simmer until potatoes are tender, about 15 minutes.
