Recipe - Skillet Salmon Patties

2 Slightly beaten eggs
Three fourths cup Fine dry breadcrumbs
1/3 cup Creamy cucumber salad
dressing
15 One half ounce Red salmon, skin and bones
removed, drained and flaked
One half cup Chopped water chestnuts
1 tablespoon Snipped dried chives
2 tablespoon Cooking oil
2 tablespoon Mayonnaise or salad dressing
1. Combine eggs, One half cup of bread crumbs, and 2 tablespoons of dressing.
Add salmon, water chestnuts, and chives. Mix well. On waxed paper, shape
the salmon mixture into four 3/4inch thick patties. Coat the patties with
the remaining bread crumbs. 2.In a 12inch skillet, cook patties in hot oil
over medium heat about 6 minutes or until golden, carefully turning once.
3. Meanwhile, combine remaining dressing and mayonnaise. Dollop each patty
with some of the dressing mixture.
