Recipe - Sinless Sour Cream Cheesecake

1 Envelope knox unflavored;
gelatin
One fourth cup Cold water
Three fourths cup Boiling water
Sweetener equal to One half cup;
sugar
1 pack (8 oz.) lite cream Cheese;
softened
1 Container; (8 oz.) lite sour
Cream
1 teaspoon Vanilla extract
Fresh fruit; optional
1 Graham cracker crust; see
Instructions for this.
Have all ingredients at room Temperature.
In blender, sprinkle gelatin over cold water. Let stand 2 minutes. Add
boiling water and process at slow speed until completely dissolved. Add
remaining ingredients, process until blended. Pour into 8 or 9 inch inch
pie crust prepared with Three fourths cup graham cracker crumbs and 2 tbs. melted
diet margarine. Chill until firm. Garnish with fresh fruit if desired.
Makes 10 servings.. Per serving with crust: calories 120, protein 4 gms.,
carbs. 15 grams (using sugar), total fat 5 g (unsat. fat 2 g), sodium 158
