Recipe - Shrimp Fricassee

2 tablespoon Butter
2 tablespoon Flour
1 One half cup Canned tomatoes
2 tablespoon Finely chooped tomatoes
2 tablespoon Chopped green peppers
One fourth teaspoon Garlic minced
One fourth teaspoon Salt
One fourth teaspoon Pepper
1/8 teaspoon Thyme
One half teaspoon Parsley flakes
1 Bay leaf
One half teaspoon Celery salt
1 pound Shrimp cooked, peeled and
Deveined
2 cup Cooked rice
1) Preheat oven to 350. F
2) Melt butter in large frying pan. Add flour; cook constantly, until
lightly browned.
3) Add tomatoes, green pepper, garlic, salt, thyme, parsley, bay leaf,
celery salt, pepper, and salt; simmer 15 minutes.
4) Add shrimp to frying pan; simmer for 5 minutes.
5) Pack cooked rice into greased custard cups; bake for 5 minutes.
6) To serve, unmold rice unto serving platter. Pour shrimp mixture over
rice molds.
