Recipe - Scannels Soda Bread

Ingredients:

1 One half cup Whole wheat pastry flour
1 cup Oat bran
1 One half teaspoon Baking powder
One fourth teaspoon Baking soda
One fourth teaspoon Salt
1 tablespoon Sugar or other sweetener
2 tablespoon Caraway seeds
One fourth cup Raisins or currants
1 cup Potato or soy milk
1 tablespoon Lemon juice

Mix milk and lemon juice and set aside. Mix dry ingredients well, then
blend in caraway seeds and currants. Add milk stirring to make a stiff
dough. Turn into a lightly floured board and knead for 1 minute. Shape into
a round loaf and put into a greased 8" round pan. With a floured knife, cut
a cross into the top. Bake at 350F for 40 minutes or until lightly browned.
Cut into slices crosswise when cooled. Total cal. per slice162 Fat2grams
