Recipe - Scallop Casserole

2 cup Chopped broccoli or
cauliflower
One half cup Chopped onion
One half cup Chopped celery
One half cup Chopped green pepper
1 cup Shredded cheese
12 ounce Scallops; up to 14
Three fourths cup Bisquick mix
3 Eggs
1 teaspoon Salt
One fourth teaspoon Pepper
In a skillet saute celery, onions, and green pepper for 34 minutes. Remove
from heat and drain. Also cook broccoli until tender. Lightly grease large
pie plate. Cut up scallops. Mix vegetables, cheese, and scallops and put
into pie plate. Beat remaining ingredients until smooth. Pour evenly into
pie plate. Bake at 375 degrees until golden brown and knife inserted in
center comes out clean, about 3540 minutes.
