Recipe - Scallion Chicken

One fourth cup Finely chopped shallots
1 tablespoon Grated fresh ginger
1 Clove garlic; minced
3 tablespoon Light soy sauce
1 tablespoon Redwine vinegar
1 tablespoon Honey
2 teaspoon Dark Asian sesame oil
1 One half pound Boneless; skinned chicken
thighs, trimmed of fat
1 bn Green onions; cut in 3"
pieces
Combine shallots, ginger, garlic, soy, vinegar, honey and oil in bowl. Add
chiicken and scallions; toss.
Heat broiler. Line broiler pan rack with aluminum foil. Coat with nonstick
spray. Thread chicken alternately with scallions on 4 8inch metal skewers.
Place skewers on rack. Reserve honey mixture.
Broil chicken 5 inches from heat for 7 minutes. Turn; broil 6 minutes,
until no longer pink in center.
Boil honey mixture in saucepan 2 minutes.
Transfer chicken to platter. Pour sauce over.
