Recipe - Savory Tomato Bread Puddings

2 cn (14 One half ounce) stewed
tomatoes including liquid
3 tablespoon Packed dark brown sugar
2 teaspoon Worcestershire sauce
1 pn Cayenne
4 tablespoon Unsalted butter, melted
8 sl (about 3/8inch thick)
homemadestyle white bread,
crusts discarded, cut into
3/4inch squares
Preheat oven to 400 degrees.
In a small saucepan simmer tomatoes, brown sugar, Worcestershire sauce, and
cayenne, stirring 5 minutes.
In a bowl drizzle butter over bread squares and toss to coat. Divide bread
squares and toss to coat. Divide bread squares between four 1cup souffle
dishes or custard cups and top each serving with a quarter of tomato
mixture.
Bake tomato puddings in middle of oven for 20 minutes.
Yield: 4 servings
