Recipe - Savory Sausage Stew

1 pound Italian sausage links,
casings removed
2 tablespoon Olive or vegetable oil
1 md Onion, cut or sliced up
2 Garlic cloves, minced
2 Fresh Idaho potatoes, cut
into 1inch pieces
1 Green or red pepper, cut
into strips 1 teaspoon
dried basil leaves
One half teaspoon Salt
1/8 teaspoon Pepper
1 md Tomato, cut into chunks
One fourth cup Chopped fresh parsley
In 3quart microwavesafe casserole combine sausage, oil, onion and garlic.
Cover loosely with plastic wrap; cook on High 7 to 9 minutes or until
sausage is cooked, stirring twice to break up meat. Stir in potatoes, green
pepper, basil, salt and pepper. Recover; cook on High 14 to 16 minutes or
until potatoes are tender. Stir in tomatoes and parsley. Recover; let
stand 5 minutes .
Makes 4 servings.
