Recipe - Savory Oven Pot Roast

3 pound Rolled rump roast
Salt, pepper, pinch of
nutmeg
4 tablespoon Flour
1 tablespoon Oil
1 Clove garlic; crushed
4 lg Onions; cut or sliced up
2 cup Hot beef broth
2 tablespoon Tomato paste
1 tablespoon Sugar
1 tablespoon Vinegar
1 teaspoon Thyme
1 Bay leaf; broke
Combine flour, salt, pepper, and nutmeg. Dust beef with seasoned flour.
Heat oil in heavy pan; brown meat, then remove. Brown onions and garlic
lightly in pan. Replace meat; add remaining ingredients. Cover and bake at
350F until meat is tender, about 2 One half hours. Discard bay leaf. Serve with
pan gravy.
