1 cn (6oz.) Dole pineapple juice
Three fourths pound Flank steak
2 Green, red or yellow bell
peppers,, cut in strips
1 lg Red onion, cut or sliced up
1 cup Monterey jack cheese,,
shredded
4 Flour tortillas
Pour pineapple juice over flank steak in nonmetallic dish. Cover; marinate
30 minutes in refrigerator. Discard marinade. Grill or broil steak with
peppers, onion for 15 minutes for medium rare or until vegetables are
tender. Divide steak and vegetables and cheese among 4 (8 inch) flour
tortilla. Roll up. Serves 4.
