One half cup Onion chopped
2 tablespoon Nonfat sour cream
One half cup Zucchini chopped
3 Egg whites
1 ounce Cooked lean ham chopped
Three fourths cup Buttermilk baking mix
2 One fourth ounce Shredded cheddar cheese
One fourth teaspoon freshly ground black
Pepper
1 cup Skim milk
1. Preheat oven to 350F. Spray 9inch glass pie plate with nonstick
cooking spray; set aside. 2. Spray small nonstick skillet with nonstick
cooking spray; add onion, zucchini, and ham. Cover over medium heat until
onion is translucent, about 2 minutes. 3. Spread onin mixture over bottom
of pie plate; sprinkle cheese over top. 4. In small bowl, combine milk,
sour cream, egg whites, baking mix and pepper until blended. Pour into pie
plate. Bake until golen brown and puffy, 35 to 40 minutes. Each serving
provides: One fourth milk; 1 One fourth proteins; One half vegetable; 1 bread; 25 optional
calories. Per serving: 213 calories, 13 g protein, 9 g fat, 20 g
carbohydrate, 239 mg calcium, 525 mg sodium, 22 mg cholesterol, 1 g dietary
