Recipe - Savannah Red Rice

One fourth pound Bacon
One half cup Chopped Onion
2 cup Raw Rice
2 cup Red Tomatoes
One half teaspoon Salt
One fourth teaspoon Pepper
1/8 teaspoon Tabasco
Fry bacon until crips. Remove from pan & cook onions until tender in bacon
fat. Add rice, tomatoes, seasonings and bacon, crumbled. Cook over low
heat about 10 minutes. Pour into twoqt. casserole and cover tightly (can
use foil). Cook in 350degree oven for one hour, stirring with fork a
couple of times. Serves 68 people.
