Recipe - Saucy Stuffed Chicken

2 cup Stuffing Mix
1 cup Boiling water
2 tablespoon Margarine
4 Boned, skinned chicken
breasts, flattened for
rolling
Some olive oil for cooking
1 Jar (12oz) chicken gravy
(or your own gravy)
1 cn (15 1/4oz) whole tomatoes,
drained and chopped
One half teaspoon Dry thyme leaves or
1 teaspoon Fresh thyme
2 tablespoon Sweet vermouth (or apple
juice)
Mix stuffing, water, and butter. Let stand 5 minutes. Place on chicken,
roll and secure with wood picks.
Brown chicken in oil in a heavy skillet. Add gravy and remaining
ingredients. Simmer covered for 30 minutes.
