Recipe - San Joaquin Oven Roast

Ingredients:

4 pound Chuck roast
2 teaspoon Salt
One fourth teaspoon Pepper
2 tablespoon Flour
Three fourths teaspoon Crumbled marjoram leaves
One fourth cup Freeze dried shallots
Water

Sprinkle both sides of meat with salt, pepper & marjoram. Place in
roasting pan in 500 oven; brown on both sides, turing once, 3040
minutes. Sprinkle shallots over top of meat: cover, reduce heat to
350. Cook 1 hour or until tender. Measure pan drippings for gravy;
add enough water to measure 2 cups. Blend in flour; cook & stir until
thickened.
