Recipe - San Franciscos Joes Special

Ingredients:

1 pack Chopped frozen spinach or
One half pound fresh spinach,
chopped
1 md Onion; chopped
1 Clove garlic; finely minced
2 tablespoon Olive oil
1 pound Lean ground beef
Salt and pepper to taste (i
use fresh ground pepper)
4 Eggs; lightly beaten

Thaw spinach and drain well or cook fresh and drain well. Set aside. In a
heavy skillet saute onion, and garlic in oil until transparent. Add the
beef and brown thoroughly. Sprinkle with the salt and pepper and stir in
reserved spinach. Keeping heat high, add the eggs to the skillet, stirring
constantly until eggs have blended and cooked. Adjust the seasonings, serve
immediately. Makes 4 servings
