Recipe - Salsa Nueva

1 pound Tomatoes peeled&chopped
2 Carrots , parboiled
Finely chopped
Salt
2 Pickled jalapeno peppers,
canned,minced,seeds and all
1 teaspoon Oregano
2 tablespoon Pickling liquid from chiles
2 tablespoon Salad oil
1 teaspoon Garlic mashed
Peel and chop the tomatoes and add to minced carrots. Season with salt. Add
jalapenos, oregano, pickling liquid, oil, and mashed garlic. Let sauce
stand for at least 1 hour so that the flavors will blend.
