Recipe - Salsa Fria (Cooked)

Ingredients:

1 tablespoon Butter
1 teaspoon Cumin
One fourth cup Onion, minced
One half cup Hot pepper, minced
1 cn (1lb.)Tomatoes,chopped OR
2 cup Fresh tomat. peeled,chopped
Three fourths cup Crushed pineapple
One fourth cup Lime juice
1/8 teaspoon Cinnamon, ground
Salt & pepper

In saucepan, melt butter. Add the cumin, onion and hot pepper. Saute until
the onion is translucent, 23 min. Add the tomatoes, pineapple, lime juice,
and cinnamon. Simmmer for 30 min. Season to taste with salt and pepper.
Cool. Serve at room temp. Exceptionally good with grilled fish. Yield:
Approx. 2 One half cups.
