Recipe - Sailboat Rye Bread (Abm)

4 ounce Water
4 ounce Milk
2 tablespoon Butter
2 tablespoon Honey
2 tablespoon Molasses
1/3 cup Brown Sugar
1 tablespoon Gluten
1 teaspoon Lecithin
1 teaspoon Dough enhancer
1 teaspoon Salt
5 One fourth cup Bread Flour
Three fourths cup Rye Flour
2 teaspoon Yeast

** I have substituted Applesauce for Butter ** I have substituted 2T dry
milk powder + 8 ounce water for the water and milk combination. (I also have a
Zoji, larger size Regal, small and large Panasonic...but the Regal seems to
excel at dark flour breads, so I prefer to use it for this bread. Regal is
similar to the Chefmate, Trillium, and Pillsbury. All are made by MK Seiko
