Recipe - Sable Dough

FOR THE SABLES DOUGH
4 ounce Sugar
6 ounce Butter
4 Eggs
8 ounce Cake flour
3 ounce Almond flour
One half ounce Baking powder
FOR THE FILLING
12 ounce Cream cheese
3 ounce Sugar
3 ounce Passion fruit puree
Raspberries with sugar
DOUGH: Mix the butter and sugar, then add the whole eggs and almond flour,
cake flour and baking powder. Bake at 320øF for 15 minutes. When cooled,
cut the dough into circles.
FILLING: Mix the cream cheese and passion fruit puree together. Place the
filling into a pastry bag. Using the roundtube, pipe the filling onto the
round sable and then top with another sable round. Decorate the sable with
powdered sugar and a raspberry. Garnish the sable with raspberry sauce and
decorate with some raspberries. Yield: 6 servings. Typed in MMFormat by
