Recipe - Rum-Cinnamon Syrup

1 One half cup Water
8 In stick cinnamon, broken
3 cup Light corn syrup
1 One half cup Packed brown sugar
One fourth teaspoon Rum extract
6 Pieces stick cinnamon, 2" or
3 "
6 (One half pt.) jars
In saucepan, combine water and broken cinnamon sticks. Simmer,
covered for 15 minutes. Add corn syrup and brown sugar. Cook and stir
until sugar is dissolved; bring to boiling. Stir in rum. Strain out
cinnamon. Pour hot syrup into hot clean One half pint jars. Leave 1/2"
head space. Add one piece of cinnamon to each jar. Adjust lids.
Process in boiling water for 10 minutes (start timing when water
returns to boiling). Makes 6 (1/2) pints. Good over pie, ice cream,
etc.
