Recipe - Rose-Flavoured Turkish Delight

3 Envelopes unflavoured
gelatin
2 cup Sugar
1 cup Water
One half teaspoon Good rose flavouring
Red food colouring
1 cup Icing sugar; or more, mixed
with
1 cup Corn starch; or more

Bring gelatin, sugar, and water to boil, then simmer for 20 minutes. Add
rose flavouring and a few drops of colouring. Strain into buttered pan and
chill 24 hours.
Turn out onto slab covered with One half icing sugar mixed with One half cornstarch.
Cut into 1' squares, being careful not to let them touch each other (or
they stick!). Roll each in sugar mix, and pack in an airtight tin with
remainder of sugar mix.
