Recipe - Robiola Bruschetta With White Truffle Oil

1 Loaf french bread; cut or sliced up on
the diagonal
Garlic clove
One fourth cup Olive oil
One half cup Robiola cheese*
White truffle oil
* Available at specialty cheese shops and by mail order from Zabars
(8006976301)
Preheat broiler.
Grill bread on hot grill pan for 1 to 2 minutes per side. Remove from heat,
rub with the garlic clove on one side and lightly brush with olive oil.
Place toasts on a foil lined sheet pan.
Top with the Robiola cheese and place under a preheated broiler until just
melted, and bubbly. Remove from the oven, drizzle with truffle oil and
serve immediately.
