2 md Sweet potatoes; peeled and
cut into 1" cubes
1 tablespoon Olive oil
One half teaspoon Salt
One fourth teaspoon Black pepper
2 Cloves garlic; finely minced
4 Wedges fresh lime

Heat oven to 375*. Place sweet potato chunks onto a baking sheet and toss
with olive oil. Sprinkle with salt, pepper and garlic and toss to coat.
Spread out in one layer on baking sheet. Roast 3035 min, turning once with
spatula, or until potatoes are cooked through and begin to brown. Just
before serving, squeeze each serving with fresh lime juice. Makes 4
servings. NOTE: If you want to add some bite, add crushed red peppers.
