Recipe - Roasted Curried Sweet Potatoes

1 One half tablespoon Unsalted butter
One half teaspoon Curry powder
Three fourths pound Sweet potatoes; peeled and
cut into
; 1inch pieces
; (about 2 cups)

Preheat oven to 450F.

In a small saucepan melt butter and stir in curry powder and salt and
pepper to taste. In a small baking pan toss potatoes with butter mixture
and roast in oven, shaking pan occasionally, until golden and tender, 15 to
20 minutes.

Serves 2.
