Recipe - Roasted Beet Salad

2 bn Baby beets,; roasted
1 pound Mesclun or mixed greens
One half cup Toasted walnuts
1 Shallot,; chopped
3 tablespoon Walnut oil
2 teaspoon Raspberry vinegar
One fourth pound Goat cheese
Salt
Pepper
Cut off beet tops. In a large serving bowl, toss beet tops with mixed
greens and walnuts. Add beets to salad. In a skillet, saute shallot in
walnut oil. Deglaze with vinegar. Pour this dressing over salad and toss.
Sprinkle top with goat cheese. Season with salt and pepper and serve
immediately.
