Recipe - Roasted Bananas With Brown Sugar-Walnut Glaze

1/3 cup Packed brown sugar
One fourth cup Fresh lemon juice
2 tablespoon Reducedcalorie margarine;
melted
One fourth teaspoon Ground cinnamon
4 lg Firm ripe bananas
Cooking spray
One fourth cup Walnuts; chopped,toasted
1 One half cup Vanilla lowfat frozen
yogurt
1. Preheat oven to 450F.
2. Combine first 4 ingredients in bowl, and set aside.
3. Cut bananas in half lengthwise. Place banana halves, cut sides up, on a
jellyroll pan coated with cooking spray. Bake at 450F for 4 minutes.
Drizzle sugar mixture evenly over banana halves, and sprinkle with toasted
walnuts. Bake an additional 3 minutes. Cut each banana piece into thirds
crosswise. Serve bananas with frozen yogurt; drizzle with any remaining
sugar mixture.
