Recipe - Roast Goose With Wild Rice Stuffing

14 pound Goose
STUFFING
2 cup ;Water
One half cup Wild rice
1 cup White rice
One half cup Onion, minced
1 cn Mandarin oranges
One half cup Pine nuts
1 cup Chestnuts, shelled &
quartered; (opt)
One half cup Celery, minced
One half Cube of butter
GooseClean out excess fat (there will be a lot!) and rinse well. Stuff,
salt & pepper skin, prick well, & tent with tin foil. Roast at 375 F for 4
hours. Remove tent & cook 30 minutes more. (Approx 25 minutes per pound)
StuffingCook rice until done. Saute celery & onion in butter. Mix all
ingredients & stuff goose.
