Recipe - Rigatoni With Sausage (Spicy) Sauce

12 ounce Rigatoni or ziti macaroni
2 Three fourths teaspoon Salt
Three fourths pound Extra lean ground beef;
(ground round)
1 md Onion; minced
1 teaspoon Fennel seeds; crushed
One fourth teaspoon Crushed red pepper
28 ounce Canned Italianstyle stewed
tomatoes; (one large or two
standard cans)
Chopped parsley; for garnish
1. Prepare rigatoni as label directs, using 2 teaspoons salt in water;
drain and keep warm.
2. Meanwhile, in nonstick 12inch skillet over mediumhigh heat, cook
ground beef, onion, fennel seeds, crushed red pepper, and Three fourths teaspoon
salt, stirring occasionally, until all pan juices evaporate and meat is
well browned.
3. Stir in stewed tomatoes; over high heat, heat to boiling. Reduce heat to
low; cover and simmer 10 minutes. Spoon sauce over rigatoni; sprinkle with
chopped parsley.
Each serving: About 585 calories, 29 g protein, 79 g carbohydrate, 16 g
total fat (6 g saturated), 57 mg cholesterol, 1120 mg sodium.
