Recipe - Refried Beans With Tomato

Ingredients:

2 cn (15oz.) of pinto beans
3 tablespoon Olive oil
1 md Onion, chopped
1 teaspoon Hot Sauce (like Tabasco or
Religious Experience)
2 md Tomatoes, peeled, seeded,
chopped
1 tablespoon Diced red bell pepper
One half cup Sour cream
2 tablespoon Chopped scallion

1. Mash beans with a potato masher, or in a food processor.

2. In a large frying pan, heat olive oil. Add onion, chilies, bell pepper,
and tomatoes. Cook until onion is translucent. Add mashed beans and hot
sauce. Cook over low heat, stirring frequently, for 710 minutes. Serve
warm as a side with a dollop of sour cream and some chopped scallion for
garnish.
