Recipe - Red Onion Confire

1 pound Red onion; julienned
1 teaspoon Unsalted butter
One fourth cup Honey
One fourth cup Brown sugar
Three fourths ounce Red wine vinegar
Three fourths ounce Red wine
TT kosher salt
TT pepper
1. Heat butter over high heat, add onions and sweat them.
2. In a seperate pan, Combine sugar & honey. Cook until lightly
caramelized.
3. Add vinegar and wine, reduce.
4. Add onions and cook until thick.
5. Adjust seasoning to taste.
Serving Ideas : Serve with Steak instead of Steak Sauce.
NOTES : YIELD: 8oz Portion
