Recipe - Red Cabbage And Apples

2 pound Red cabbage, finely shredded
8 Juniper berries, crushed
One fourth pt Boiling water
1 teaspoon Salt
8 ounce Onions, chopped
8 ounce Apples, chopped
2 ounce Soft brown sugar
1 teaspoon Caraway seeds
1 Bag bouquet garni
1 tablespoon Cornstarch
3 tablespoon Malt vinegar
1 tablespoon Cold water
Place red cabbage, junipers, One fourth cup boiling water & salt in a large
pot. Bring to the boil, cover & simmer for 30 minutes. Stir in
remaining water, onions, apples,sugar, caraway seeds & bouquet garni.
Cover & cook gently for 1 One half hours, stirring frequently.
Remove bouquet garni. Blend cornstarch with the vinegar & cold water
till smooth. Stir into the cabbage & cook uncovered for 10 minutes.
Stir often to prevent sticking.
