Recipe - Red Beans N Rice

Ingredients:

BEANS
2 pound Soaked Red Beans
2 ounce Beef base/bouillon
8 ounce Tomato, minced
3 ounce Wine, red
1 ounce Bacon, drippings
1 pound Onions, minced
One fourth pound Celery, minced
1 ounce Green onions
Three fourths ounce Garlic, minced
2 teaspoon Cumin
One fourth teaspoon Cayenne pepper
1 One half teaspoon Salt
One half teaspoon Pepper
1 One half ounce Sugar
One fourth pound Andouille Sausage
One fourth pound Ham hocks, minced , no fat or
bones
One fourth pound Ham or pork scraps, minced

RICE
4 ounce Butter
Three fourths pound Onion
2 Bay leaves
4 One half pound Rice
1 ga Water
1 tablespoon Salt
One half tablespoon Pepper
2 ounce Chicken bouillon

Here's a recipe I came across that is made at Disney's Port Orleans Resort.
It makes a big batch, but I'm sure you can cut it down.

Clean and soak beans overnight. Add beans to large stockpot, add with
enough water to cover by 2 inches. Add tomatoes, base, wine, and spices.
Bring to boil. Meanwhile, saute vegetables with bacon drippings. When
onions are translucent, add vegetables to stockpot, bring to simmer. Add
minced meats and continue to simmer 23 hours, until beans are tender and
sauce thickens. Makes 1 Gallon

Rice: Heat oil, add onion and bay leaves, saute until onions are clear. Add
rice, water, salt, pepper, chicken bouillon and bring to boil. Simmer for
20 minutes or until tender. Makes 8 lbs
